Why is it? When I read many stories here and on other fan fiction sites, people are quite busy with their speech and in response to others' speech?

I have been around in many environments, peoples, trades, &c., and I have Never seen anyone "color;" as does Jane Austin's characters, "breath caught in his throat," or "looked pointedly;" instead of directed, and others as I see from time to time. I have seen people wince, grimmace, grin, simper, smile, bat an eyebrow or both in a Groucho Marx way, gasp, scowl, shrug, flip the finger, gag, &c., but some of the descriptions of actions? Nope.
